Tyche's Mustard Shiraz

d'Arenberg Tyche's Mustard Shiraz is grown on a site initially home to six land holdings, five of which were deemed unsuitable for viticulture and sold to pay for the vineyard.
As Tyche (the Greek goddess of luck) would have it, the single retained holding indeed produces exceptional fruit.
Small batches of grapes are gently crushed and transferred to open fermenters. The batches remain separate until final blending. Foot treading is started two thirds of the way through fermentation.
The wine is basket pressed and transferred to new and seasoned French oak to complete the ferment. It ages on lees for 20 months. There is no racking until final blending and no fining or filtration.
Deep crimson, d'Arenberg Tyche's Mustard Shiraz is opulent with dark fruit flavours built on a foundation of fine, gritty tannins. Cellaring potential is 20 years.
